Subtract the market tax from the food sell price, then subtract the net cost of the ingredients after the resource return rate and the cooking station fee. The remainder is your profit per dish, which the calculator totals for a full batch.
Yes. Cooking refunds a share of your ingredients through the resource return rate just like item crafting, and using focus raises it. The calculator counts those returns so the profit reflects what you actually spend.
